Les Moulins Mahjoub: Natural Preserved Organic Lemons
If you’ve never used preserved lemons before, you’re in for a treat! Whole organic lemons are scored through their centers, then packed into jars with a hot pepper and submerged in a salt brine. They are tender and fragrant, and keep forever. To use, remove from the brine and chop, removing the seeds as you find them. The rind can be cut into neat pieces, the pulp less so. Toss into soups or stews; use in a marinade or vinaigrette; add to a chopped Mediterranean salad; or use in anything to do with seafood (I had a particularly memorable Dungeness crab and pasta dish at a friend’s house that used preserved lemons for a balanced citrus kick). You’ll find lots of uses for this wonderful condiment!
