Taza chocolate, based in Sommerville, MA tastes better because they buy beans directly from small farmers. And P.S., it’s the small farmer who is often most diligent about quality—drying and caring for their beans with great care and pride. Nine times out of ten this diligence yields a fantastic bean that can be made into fantastic chocolate. And that’s precisely what Taza has produced.
Taza also minimally processes the beans—which means they use only stone mills to preserve not only the natural flavor but the integrity of the bean. This yields an incredibly full flavored chocolate with a hint of grittyness as the beans retain a bit of their original character.
Our bottom line: this chocolate will blow you away. This 60 percent cocoa content is bold yet creamy, slightly acidic but not whiny. A top ten chocolate experience.
