Villa Reale Artichoke Paté
Satiny-smooth, ethereal, almost buttery, this “pate” is a blend of artichoke hearts, herbs, wine vinegar oil and salt—nothing else. It’s the best part of the artichoke, distilled, dreamy. Because of its delicacy, it is best used in a way that will show it off, as a filling for a miniature tart, for example, or on a sautéed fillet of sole. Or hollow out small boiled potatoes, fill with artichoke pate and top with caviar for an elegant hors d’oeuvre. Dollop on a halved hard-boiled egg; fold into a crepe or omelet; toss with fresh egg pasta, parmesan cheese and cracked black pepper; or do as I do, and spread it on your morning bagel for a luxurious treat!
