Villa Reale Garlic Paté
This magical condiment, snow-white and almost fluffy in texture, is made from garlic cloves that have been poached to tame their aggressive nature. You can actually sample it by the spoonful without the fear of garlic breath—it tastes deliciously of garlic, salted just enough, not in the least bit harsh or bitter. When you first open the jar you may notice a pinkish hue on the surface of the spread, but that is normal—just stir it in.
How do you use garlic pate? Let me count the ways. For garlic bread; in vinaigrette; as a sauce base; on pizza, pasta, risotto, potatoes or any other starch; tossed into steamed vegetables; as a dip for crudite; in an omelet; as a sandwich spread…and on and on. Honestly, this is the most versatile condiment I think I’ve ever come across. With the possible exceptions of breakfast cereal and chocolate cake, there are few dishes that wouldn’t benefit from a spoonful.
