September Artisan Cheese Feature:
Gruyere Vieux AOC - Le Cret sur Semsales, Switzerland
JUST IN!!! A very special, 70 pound wheel of Gruyere from cheese maker Jean-Marie Dunand!
Gruyere Vieux is aged over 16 months & Swiss regulation requires that this cheese must stay within the AOC area of Switzerland throughout the aging process. The control and care each cheese receives produces cheese with a deep nutty flavor & long finish.
Q: Why is it shaped like a wheel and so large?
A: The development of Gruyere cheese in the mountainous region of Switzerland occurred as a result of cow herds being driven into the Alps in search of available pastures. Cheese making took place all summer long & required that cheese makers move their copper cauldrons & cheese making supplies regularly. Fundamental to all cheese making is salt, and moving large quantities of heavy salt higher and higher was arduous.
Cheese makers learned that using less salt meant applying special techniques to rid the milk of whey. Three principal methods of removing the whey were to cut the curd into very small pieces, heat the curd & then press the formed cheese.
Cheese was aged in the mountains and brought back down to the valley floor in the late fall. It was easier to move large cheeses rather than thousands of small pieces. Also, larger pieces aged more slowly, making it perfect to eat throughout the fall & winter months.
When the cows are brought back from the mountain pastures, small towns & villages in Switzerland have grand festivals & parade the herds down main streets. These celebrations are known as Desalpe. Resplendent in their traditional bells, cows are decked out with flower wreaths.

We are a unique fresh food market, OPEN ALL YEAR, located one mile west of the historic village of Woodstock. Nothing has really changed since our start in 1992, except the size of our building and staff. Now at 30 to 40 part and full time staffers, we are local food junkies who serve our community award winning food: our prepared foods and deli department serve outstanding breakfast, lunch, fabulous sandwiches, deli salads as well as hot entrees for dinner; our deli serves incredible local and world famous farmhouse cheeses, olives, sliced meats and other gourmet provisions, plus plenty of strong coffee and espresso beverages.
Our seafood and meat departments in our deli are the place to find the freshest seafood north of Boston and the best hand cut meats and all natural poultry in the Upper Valley. We also search for local or all natural meat suppliers whenever possible.
Our produce department serves the absolute freshest conventional, organic and local produce available while our garden center is home to zone hardy locally grown perennials and unique annuals including plenty of local pumpkins mums in the fall and holiday greenery and Christmas trees in the late fall.
And our grocery department keeps a wide array of specialty and everyday groceries on our shelves and speeds our guests through our checkout with the latest technology and pleasant, speedy service. We specialize in hard to find unique food products like olive oils, marinades, chocolates and jams from Vermont and the world all over. And we ship most of our food stuffs all over the world.
