Some of the very best pasta we've tried is made by an old pasta company out of the "heel" of Italy, making pasta the same way they did years ago - they call it the "Delicate" method. It means long kneading and pressing, slow drawing and drying at room temperature. In fact, the family still uses the same factory suitably equipped to maintain this original method of making pasta. Bottom line: their traditional manufacturing process makes such a difference in taste and texture you will be truly amazed. For me, this pasta is so tasty it pushes pasta dinner into a new realm- it's like eating steak or pork!

To exemplify that fact, one day a "foodie" customer of ours was looking over the pasta selection, trying to decide what to get for dinner. I steered him toward the Benedetto, but he balked at the price. I asked him how much he would have spent on a steak or seafood for dinner instead, and he looked at me, his eyes widening. "You're so right!" he said (I love hearing that!). "What am I thinking?" He grabbed a bag of pasta. Pushing my luck a little further, I said "When you think about it, the pasta is the centerpiece of the meal, so you want to spend a little more on it. It makes all the difference in the finished dish".

He's been buying Benedetto ever since.
