Stonybrook Whole Hearted Foods Butternut Squash Seed Oil
Made from the left-over seeds of a local farm’s butternut squash processing business, this delicious dark green oil is made by roasting and then expeller-pressing the seeds. Similar to Austrian pumpkin seed oil, it is deeply nutty and flavorful, similar in flavor to the roasted pumpkin seeds you make at Halloween after carving your jack o’lantern! The squash is 100% GMO-free, grown in upstate New York, and yields an oil high in mono- and poly-unsaturated fats. It’s also rich in vitamin E—but most of all, it just tastes great. I love it drizzled over steamed or roasted squash; anything containing corn; dark green leafy veggies; soups (especially bean or lentil); and in salads containing radicchio, endive, arugula and avocado. I’m sure I’ll discover lots more great uses for this oil, including some kind of dessert (sweet cornbread with rosemary, perhaps? A hazelnut cake with dried fruit? Sweet potato flan?) It’s the sort of ingredient that inspires a cook to get in the kitchen and invent!
