Nothing can prepare you for your first taste of real Balsamic vinegar. Nothing.
In fact, it's one of my favorite foods to watch other people taste a drop or two for the first time. The reaction I have observed over the years is nearly universally the same; some combination of sighs, moans, eyes either widening in pleasurable shock or closing in unabashed delight. Speech is often temporarily suspended, or reduced to such expressions as "Wow", or "Oh my goodness!".
And that's just after tasting a single drop.
It's been made pretty much the same way in the Modena and Reggio Emilia regions of Italy for around a thousand years, and since the 1980's the process has been protected by law. This Cavalli Silver Label is a sensory journey crafted by dedicated artisans. There really is a Cavalli family; we've met them at food shows. Boy, are they passionate about their products.
Use a few drops on great aged or young cheese for dessert (like Parmigiano Reggiano), or anoint a lovely bit of delicate broiled fish, or celebrate the season's first simply steamed asparagus or new potatoes topped with a little. Use sparingly, and on simple dishes so you can appreciate its complexities.
The Silver Label contains vinegar that has been aged a minimum of 12 years, and each bottle is numbered and dated. Each is beautifully boxed and comes with a glass pourer top and information booklet. A truly artisan product that makes an outstanding gift.
