Cobb Hill Cheese - Ascutney Mountain

Made in Hartland, Vermont at a farm collective, Ascutney Mountain Cheese (named after a breathtaking local peak), is an alpine-style cheese with a complex, nutty flavor. It was awarded a blue ribbon in 2006 by the American Cheese Society in the Farmstead Cheese category, which means that all the milk comes from their own farm.

It is great for toasted cheese sandwiches with a few strips of roasted red peppers and perhaps some Lars Crispy onions sprinkled on top. It is made from the milk of the farm's Jersey cows, who eat only organic grass, hay and grains.
