Consider Bardwell Farm: “Dorset” Cheese - West Pawlet, VT
Dorset is an award-winning (2nd place Washed Rind-American Cheese Society 2008) washed rind, raw Jersey cow’s milk cheese made by some great folks on 300 acres up in the very southern Champlain Valley of Vermont. “Consider Bardwell” seems curious but the farm is named after the guy who founded the first Vermont cheese making co-op on this very farm back in 1864—Consider Stebbins Bardwell.
Can a cheese be a work of art? When we first unwrapped a three pound wheel of Dorset we were oohing and ahhing at the beautiful rind of this cheese which is formed in French wooden molds giving the cheese a lovely cross hatched basket appearance. The taste is a masterpiece of lush, buttery taste and Dorset has a semi soft texture. Great served for an elegant appetizer or even dessert. Another outstanding Vermont cheese!
