Crawford Family Farm Vermont Ayr Farmstead Cheese

Made exclusively from the raw milk of the Crawford family's Ayrshire cows, this is a new favorite for us. It is a natural rind alpine-style cheese with a flavor like buttery roasted nuts. Ayrshire milk has tiny butterfat globules, which lend the cheese a smooth and creamy consistency and sweet taste. Ayrshire cattle are a Scottish breed, and make up only 3% of all cows in this country, making them rather rare. The Crawford family adore their cows and have a picture and personality profile of several of them on their website, in case you want to know them better. They are very beautiful. Seeing them makes me love their cheese even more!
