Farmers’ Brown WindsorDale Cheese
When our friends at Vermont Farmstead Cheese in South Woodstock got wind that Rock Art was brewing us a Brown Ale for our 20th anniversary, they suggested, “Why not pair the English Brown with our traditional aged Wensyleydale?”
And voila! Enter Farmers’ Brown WindsorDale, a traditional British Wensyleydale infused with our Farmers’ Brown. Wow, what an outstanding combination! Because Vermont Farmstead ages it’s WindsorDale a minimum of 6 months, the ale enhances the flavor of the cheese—rather than overwhelming it. You taste cheese first, then the nutty ale. It’s fantastic! The WindsorDale is aged, sharp and creamy; the Brown Ale is mellow and nutty…it’s a match made in heaven. It’s perfect snacking cheese—its’ more crumbly than spreadable—with crackers or a baguette but even better melted on a grilled tomato and cheese sandwich. On a burger it’s absolutely heaven.
