Traditional Goat's Milk Caramel
Traditional “Dulce de Leche-style” caramel made with fresh Vermont goat’s milk...what’s not to love? Fat Toad’s rendition is a based on a traditional Mexican confection—Cajeta—and is made at the farm by hand stirring and simmering their own goat’s milk and sugar for several hours until the mixture becomes rich, creamy and golden brown.
The resultant caramel is thick, rich, buttery and simply knee-buckling. We tasted this at recent food show and were blown away. Throw a dollop or two on a Nitty Gritty Sweet Cornmeal Cake and you’ve created a dessert worthy of the sweets hall of fame!

Fat Toad Farm is a small, family run goat dairy located in Brookfield, which is in Central Vermont. They have a small herd of 40 Alpine and Saanen goats that are milked rotationally from spring to fall and live in a warm, snug greenhouse during the winter.
