Cheese Sings the Blues: The WFM Blues Box
When my three sisters and I get together inevitably someone will ask if my sister Mary and I are twins; clearly the three of us are siblings, but twins—far from it. So it is with blue cheese and our Blues Box trio (a half pound of each)--they all look somewhat alike but each is distinctive with very different tastes and textures. Bayley Hazen Blue is earthy with hints of grasses and chocolate and a crumbly texture, developed by Jasper Hill Farm in Greensboro, Vermont it is the youngest sister. Colston Bassett Stilton from Neal’s Dairy has a creamy paste and a balanced sweet and salty flavor, the oldest, probably schooled at Oxford. Gorgonzola Dolce, the peacemaker that just about everyone loves, has a sweet, creamy paste with nuggets of blue throughout.
