Villa Reale Acciughe con Pomodoro: Rolled Anchovies with Sun-Dried Tomatoes

THE BEST, EVER!  Sicily is justly famous for its seafood and tomatoes, so no surprise that the combination is such a winner.  The sweetness of the tomatoes plays off the saltiness of the fillets, which are firm and slightly chewy.  They’re terrific right out of the jar, but you can also sauté them with garlic as the basis for a tomato sauce, or toss them on a pizza or into a salad.  Use the oil to make a vinaigrette, Caesar salad dressing, or to sauté seafood.
