Aceto Balsamico Tradizionale Di Modena

This Tradizionale Balsamic, truly a seventh wonder, is made from the must of Trebbiano, Lambrusco, Spergola and Berzemio grapes—with absolutely no additives whatsoever. It’s aged in casks made from a variety of different woods including chestnut, oak, cherry, ash and mulberry, and subsequently transferred between such barrels, each of which adds characteristics to the flavor.  Barrels are stored in the attic as heat encourages the ageing process and evaporation concentrates the flavor.  Simply put, the procedure is nothing short of amazing and most of us can’t even conceive of something being barrel aged fifteen to twenty years.  Not to sound like a used car salesman, this is your once-in-a-food-lifetime chance to try something as rare as this.  

What do you actually do with such a treasure?  Taste it on a spoon—always plastic or porcelain, as metal imparts its own flavor.  Try a drop or two on a chunk of aged Parmiggiano Reggiano—fabulous.  Dribble it on ripe strawberries or ice cream.  Use an eye dropper or special pourer to make sure the unsteady hand of a friend doesn’t dump the one hundred dollars worth of vinegar on his plate by mistake, thereby straining relations forever.  And keep in mind, when tasting this culinary masterpiece, that you are tasting history, and the work of many hands, and the pride of generations, and the passion of a few dedicated people.
