Sundried Tomatoes
For two generations the Licata family in Bologna has specialized in creating traditional Sicilian products with organic ingredients, following traditional recipes and culinary customs. The result: a huge line of sweet and savory condiments featuring regional specialties such as wild fennel, anchovies, oranges, pistachios, garlic and more. It was at Campo d’Oro’s facility that I saw the incredible sight of tomatoes actually being dried in the sun! On screen tables that stretched into the distance, split tomatoes were laid, cut-side up, and hand-sprinkled with salt by smiling, kerchiefed elderly ladies. From a distance it appeared that red banners were laid out in the field under the sun.
One of Campo d’Oro’s best-loved products is their Semi-Dried Cherry Tomatoes in Oil: the Pachino variety of cherry tomato, renowned as being one of the sweetest, is partially dried in the hot Sicilian sun, then packed in olive oil, ready to toss with pasta, top bruschetta, add to salads, or bake with seafood. Not too dry or too chewy, their sweet tomato taste is much milder than the often acidic and harsh flavor of commercial dried tomatoes, so they’re much more versatile for cooking. A great pantry staple!
