Terre Rosse Extra Virgin Olive Oil

Near the Medieval town of Spela, on a steep Umbrian hillside, are the olive groves of Hispellum.  The Terre Rosse Extra Virgin Olive Oil produced here reflects the environment in which the trees grow. It's a bright green-gold, strong, grassy and briny with flavors of artichoke and herbs.

The Hispellum groves, consisting of eighty year old Moraiolo olive trees, are naturally mulched with their own trimmings.  Spread over thirty steep hectares, wild mint and fennel grow among their trunks. Three hundred hedgehogs call this land home. They are brought in to naturally control insect pests—part of the process of transition to organic certification.

The olives are hand-harvested and pressed within six hours of being picked. A high-tech cold-extraction process is used and the result is extraordinarily flavorful oil.
