John Kelly Dark Chocolate Truffle Fudge Bites with French Grey Sea Salt

I was at the 2009 SOFI (Specialty Outstanding Food Innovation) competition, and in fact had the opportunity to vote for the best foods in each category. John Kelly’s Truffle Fudge Bites had some stiff competition, but it was pretty clear from the first bite that they’d be the winner. The dense dark chocolate truffle center ("fudge" is more a description of the texture than anything) is enrobed in semi-sweet chocolate, and then dusted in coarse French sea salt. Eating one is like falling into a black hole. These may be the best chocolates to pass your lips in a very long time.
Sometimes when I eat something sweet the sugar seems to coat my palate after a couple of bites and I lose the nuance of the flavors. But adding salt to the equation actually brings out the deliciousness of the chocolate and keeps the richness from becoming too cloying. That’s the danger of these things—it’s easy to keep going when normally you might stop. That’s why you should give them to a responsible friend who exhibits good will power in other areas of his life. Otherwise there’s no knowing the havoc you could cause.
