Judy’s Vermont: Java Lava Rub & Paste
Being a rub and marinade aficionado, I pooh-poohed my first encounter with Judy’s Java Lava. Mind you, I love Judy and her husband James and they come here for demos often. But with the slogan, “erupting with flavor” I was like “yeah, yeah…that’s what they all say.”
This was several years back; now Java Lava is a fixture in my kitchen. Rub it on most anything—chicken, pork, seafood—and I have to tell you, the finished product is unbelievable. Somehow she’s blended espresso and a concoction of spices that blend together perfectly. With a hint of brown sugar, it’s slightly sweet but not overly so. It carries a kick but never overwhelms. Rub down for hours before for best results but what I like about her rub is that when I’m rushing around like a ninny, I can throw Java Lava on some chicken at the last minute and it’s almost just as good.
Ingredients: Espresso, spices, dark brown sugar and salt.
