Karen's story of how she got into the food business may have a familiar ring. Struggling to maintain a hectic business travel schedule plus dealing with the demands of a new baby daughter, Karen decided to chuck it all and start a catering business. She had always loved food and wanted to finally make a living from it.
She started out serving food outside local concerts and believe it or not, one of her busiest gigs were Phish shows (the band from Burlington, VT). On a New Orleans kick at the time, she would serve a ton of Gumbo at their concerts and found that Muffalletta was a great complement. A number of customers then began asking if she sold her Muffalletta in stores. The answer came quickly--"no way", she reasoned--"Vermont was only about maple syrup and jams. Something from the south would never sell up here."
But curiosity got the best of her--she kept getting rave reviews from locals. Then one day Karen had some leftover Muffalletta from a music festival and decided to see if her muffaletta might fly at the local farmers' market in Rutland. She sold out in one hour! Karen quickly reconsidered the Vermont specialty food business. Then she began selling it to the local Rutland Food Coop and other small food stores along route 4--including WFM! The rest is history!
