Skillet Bacon Spread

Dear God, could this really exist outside of our wildest dreams? Nueske bacon is cooked slowly with onions, balsamic vinegar, brown sugar and spices until it has the consistency of a marmalade or chutney.

One taste, and your mind will race with possibilities: use it to top steaks or hamburgers; in a beef Wellington; as the base for any number of soups; on a grilled cheese sandwich; in scrambled eggs, twice-baked potatoes or hash browns; in devilled eggs or a savory torta…anyone you know who likes bacon will go crazy for Skillet Bacon Spread (if you can bear to give it away!)

This spring I was in Seattle and I had one of their burgers at their truck: grass fed, charcoal-grilled, on a brioche bun, topped with bacon spread, cambozola cheese and arugula…with a side of poutine (hand-cut French fries topped with beef gravy, cheddar cheese chunks and chopped fresh herbs including dill…) I saw God.  He said, “Hey!  Save me a bite!”
