Balsamic Marinade and
Blueberry Balsamic Glaze
Nancy Brown's claim to fame is her Balsamic Vinaigrette. After rave reviews and awards, she expanded her offerings to include a Balsamic Marinade and Blueberry Balsamic Glaze. Her newest creations are both outstanding!
The Balsamic Marinade is full-flavored yet mellow and its base consists of balsamic, a bit of tamari, mustard seed, rosemary and juniper. This unique combo of ingredients makes it incredibly versatile. It's ideal for all meats including lamb, but extraordinary on grilled or baked veggies. Nancy's Balsamic Vinaigrette used to be my "go to" marinade, but in some ways, this is even better.
The Blueberry Balsamic Glaze is a great finishing touch. I’ll drizzle the Glaze over chicken, lamb, pork and veggies post-grill. I also apply a bit at the very end while still on the grill. It’s sweet but not obnoxious—it compliments your meal’s flavor and doesn’t cover it up like some BBQ sauces or heavy marinades.
Believe it or not, the Blueberry Glaze works well as an addition to pan sauces and on top of ice cream or fresh berries. Try this...mix the latter two for an amazing salad dressing (use sparingly—it’s strong) that is a bit of a twist from the original vinaigrette.

Blueberry Balsamic Chicken
2 whole boneless skinless chicken breasts
1/2 cup of Three Acre Kitchen Balsamic Marinade
1/2 cup of Three Acre Kitchen Blueberry Balsamic Glaze
Salt to taste
Cut breasts into four pieces length wise. Add the Balsamic Marniade
