Villa Mandori Organic Balsamic Vinegar

This is my everyday balsamic. And it's fantastic. The guys at Villa Mandori have developed an incredible process that is certified organic by Italy's ICEA, a very proactive environmental and human rights organization (see icea.com). Now for you balsamic freaks, you better sit down. This vinegar is not, I repeat, not made from barrel aged grape must. And it's really, really good.

It's made from a blend of organically grown Trebbiano grape must and vinegar from organically grown Chianti grapes to render a truly fantastic tradizionale tasting vinegar at a great price. It's consistency is less syrupy and thick than it's well known counterpart but it's remarkably clean and sweet taste is perfect for everyday use on fresh greens and over strawberries.
