Vosges Chocolates Bacon Bar
O.K., you'll have to trust me here. This combination of applewood smoked bacon, alderwood smoked sea salt and milk chocolate are, in my mind, grounds for the Nobel Prize in Gastronomy. I know there's no such thing, but there should be, and Vosges chocolatier Katrina Markoff deserves it. One bite and you suddenly realize what you've kind of always known-that the best bacon is a little sweet, the best chocolate a little savory, and smoke is the catalyst for so many great taste relationships.
Yes, it's real bacon in the bar-Niman Ranch bacon, to be precise, broken into little chips. At first taste, there's a moment when your brain says "Bacon!" and then immediately dismisses it as absurd. "But if not bacon, what? Smokehouse almonds, perhaps, but richer.what could it be, honestly?" you wonder.
Well, it's true. It is bacon.
Remember the old Reese's ads where someone's chocolate bar ends up in someone else's jar of peanut butter and they realize the combo was meant to be? So it is here. Bacon. Chocolate. Together at last.
